Day 5: BD’s Mongolian Grill and coffee.

This morning was pretty relaxing.

However, Shep still won’t drink a smoothie. I wish I had a solution for that, but my best friend doesn’t like smoothies, either, so he may never find the love for ’em.

We picked my mom up for an early lunch at BD’s, which I thought would be a safe choice for our first eating out excursion since taking this challenge on full force. It went well, the only problem was when Shep realized there was no shrimp in his stir fry bowl. Once I told him I didn’t know yet if we were going to be eating seafood, he dropped it and went back to eating his mandarin oranges.

I usually get chicken stir fry with an egg, and eat almost all of it. I wasn’t sure I would be able to get enough to eat without any meat! But I tried it anyway. I loaded up my bowl with my usual fruit and veggie mix and then added some rice noodles because it sounded good. I actually only ate about half of it before I was full. And not the blaurghy, oh my gosh I am so stuffed feeling of fullness, just a “well that was satisfying” sort of feeling. 🙂

My mom offered to take us for ice cream after, but trying to stick with our mostly dairy-free meal plan, I asked about going for coffee instead. She was game. Woot! I’ve been wanting to go back to Boston Stoker for a pour-over since I had my first one last week and was very excited. They actually had the brown sugar creme brulee decaf again, so I got the same flavor. Added a few brown sugar sugar cubes and it was delicious. I savored it over the course of an hour.

Shep had a soy milk hot cocoa and didn’t notice the difference at all. What I noticed was that he actually finished it. I don’t think he’s ever finished a cow’s milk hot chocolate, ever. As a mama, there’s a little bit of excitement that occurs when your child finishes something. Even if it’s just a hot cocoa in a paper cup!

As far as how we’re feeling halfway through the day, it’s looking pretty good.

I went from yawning before lunch to thinking about this TV show, American Ninja Warrior, this afternoon. I thought, hmm… I bet a woman could do that. Then I thought about all my friends who are running now and immediately decided I’m ready to train for something. Then I remembered I am a month out from having a baby and decided maybe Septemberish would be a better time to start training for something.

So, in conclusion, I either have more energy or the illusion of more energy.

Both are welcome. Usually by the point in the day, I begin counting down the 180 minutes until Gerry will be home. Instead, I’m blogging, watching the boys race their cars around, and thinking about prepping for dinner.

And dinner has been served.

It was AMAZING. I would prefer these spicy, crispy potatoes over beef or chicken tacos any time in the future. Vegan/Vegetarian/Flexitarian or NOT. I didn’t have half of what I needed for the recipe I found online, so I winged it and am going to type up the recipe to keep on hand.

I figured the meal required: 1 c. kale, 1 bag small potatoes, tortillas, a can of beans, 1 avocado and 1 cucumber. At Trader Joes, that came to a grand total of less than $8. And we all ate from it. Not bad at all!

It’s nice to end the day on a successful note.

Peppers, broccoli and carrots with 1/2 c. hummus.
1/2 c. oat and almond granola and 1/4 mixed nuts.
8 oz. cranberry grape juice.
16 oz. herbal/black tea with honey.
1 lg. vegan sugar cookie.

Erinne —
Strawberry, banana, oat smoothie and 1 slice cinnamon bread, 2 strawberries.
Veggie stir fry from BD’s Mongolian Grill: rice noodles, mushrooms, broccoli, snow peas, carrots, pineapple, water chesnuts, soy sauce, ginger, brown rice.
20 oz. decaf brown sugar creme brulee coffee from Boston Stoker.
1 slice whole grain bread, peanut butter and jelly.
4 potato tacos — potato and kale filling, avocado, cucumber, salsa in corn tortilla.
bowl of Great Grains cereal with almond milk and 12 oz. glass of orange juice.

Shepherd —
Almond milk, 1 small pancake, 1/2 whole wheat bun and peanut butter.
Mandarin oranges, croutons, carrots, pineapple, rice, tea.
Veggie stir fry from BD’s Mongolian Grill: tofu, potatoes, noodles, edamame, black beans, carrots, pineapple, snow peas, teriyaki sauce.
Soy hot cocoa from Boston Stoker, half snickerdoodle cookie.
2 slices whole grain bread, peanut butter and jelly.
1 potato taco — potato and kale filling, avocado, cucumber, salsa in corn tortilla.
1/2 c. pinto beans.

Archie —
Strawberry, banana, oat smoothie, 1 small pancake, 1 mini banana.
Mandarin oranges, croutons, carrots, pineapple, rice, water.
Veggie stir fry from BD’s Mongolian Grill: tofu, potatoes, noodles, edamame, black beans, carrots, pineapple, snow peas, teriyaki sauce.
Half snickerdoodle cookie.
1 c. almond milk, 1 slice whole grain bread, peanut butter and jelly.
