Days 7 + 8: A day at the park then a day inside.

I do not wish cabin fever on anyone. That is about all I have to say about Day 8 right now, other than to celebrate that I thoroughly cleaned the kitchen, which last happened much too long ago!

As for day 7, that was a great day. I woke up feeling a little tired and hungry but made one of the creamiest smoothies yet (first time using avocado) and was all right within about 20 minutes.

The boys and I visited my Great Grandma and invited my mom to come along to the park. We ended up staying there for almost 2 hours. Unheard of. Usually someone gets too hot or tired or even bored, but they were energized and the weather was awesome so we stayed awhile.

Once we were done playing, we were all hungry and went to Chipotle for lunch. I was toying with the idea of having some chicken and felt like they were the best bet for getting good quality chicken in  a pinch. I only ordered a half scoop, so when I asked for guacamole as well, the girl doubled my guacamole. I had so much avocado yesterday I turned green 😉

Actually, I am noticing my skin is not as dry as it has been. I kind of wonder if the avocado is playing a role in that!

And… the boys ate all their lunch. Praise the Lord. Boom.

Dinner turned out really well. I used this Crispy Gnocchi with basil pesto post as a guideline for how to prepare crispy gnocchi, and then made a pesto out of almonds, basil, salt, pepper and garlic olive oil. I forgot to buy olive oil at the store, so had to break out the fancy Spanish oil I’ve been saving. It was perfect. Turns out that was the dinner I was saving it for!

All in all, meals are still going well. We’re finding our groove and new habits are replacing old ones (smoothies over sausage), making the transition less stressful.

I only wish I was more skilled at shopping healthfully on a budget. All my coupons and most of the ads are for things we’ve cut out, so it requires significantly more time and effort to prepare a list, money and meal plans that match both our means and our needs.

Take into account my fatigue and the boys’ crazy antics, and it’s sometimes a wonder we eat at all. But we do, and deliciously!

Erinne —

pretzels, peanut butter and grapes

Chipotle kids meal with tortilla, brown rice, beans, lettuce, apple juice
Potato gnocchi and almond basil pesto, salad with romaine, tomatoes, cucumber and homemade coconut ranch dressing.

Erinne —
Orange juice, 2 pieces cinnamon bread.
Potato, kale, tomato hash and watermelon.

Shepherd —
2 slices whole grain bread with cinnamon and coconut butter.
