Meal Plan in Pictures.

I have been loving Asian, Italian and Mexican recipes lately. The Italian was a little hard to do without the dairy because my favorite comfort food meal for the longest time was the deliciously decadent Fettucine Alfredo. And I ALWAYS put cream in my red sauces. and topped everything Italian with parmesan or mozzarella… oh yum.

Now that we have a sheep’s cheese we like, I am excited! I can almost have my favorite meal again.

Almost.

Roasted Tomato Gazpacho | The Tomato Tart

Potato Skins and Avocado Salsa | I will be reading Chloe’s original recipe, this recipe (http://eattothrive.org/) and also this kid-oriented recipe to figure out how we’re going to enjoy our potato skins.

Macaroni and Cheese | VeganYumYum.com — this recipe uses carrots, potatoes and cashews instead of fake cheese. After the fake cheese I had last week, I needed a more familiar option.

Vada Pav (Indian Potato Sliders) | The Novice Housewife

Pajeon (Korean Zucchini Scallion Pancakes) | ChowDivine.com

Spicy Peanut Noodles | Will Cook For Friends.com — I’ll add more veggies to this recipe… carrots, mushrooms, broccoli?
