I have been loving Asian, Italian and Mexican recipes lately. The Italian was a little hard to do without the dairy because my favorite comfort food meal for the longest time was the deliciously decadent Fettucine Alfredo. And I ALWAYS put cream in my red sauces. and topped everything Italian with parmesan or mozzarella… oh yum.
Now that we have a sheep’s cheese we like, I am excited! I can almost have my favorite meal again.
Here’s the plan for the next week or so:
Enchiladas | Love & Lemons (www.loveandlemons.com/)
Summer Squash Spaghetti | this image is from atasteofhomecooking.com but I will be using the recipe I made last week. it is very similar.
Roasted Tomato Gazpacho | The Tomato Tart
Macaroni and Cheese | VeganYumYum.com — this recipe uses carrots, potatoes and cashews instead of fake cheese. After the fake cheese I had last week, I needed a more familiar option.
Spicy Cucumber Cantaloupe Salad | Ohmyveggies.com
Vada Pav (Indian Potato Sliders) | The Novice Housewife
Pajeon (Korean Zucchini Scallion Pancakes) | ChowDivine.com
Spicy Peanut Noodles | Will Cook For Friends.com — I’ll add more veggies to this recipe… carrots, mushrooms, broccoli?
